Hi, Tim! I've been told that "Take the Fifth" means "Take the Fifth Amendment" which means that: 'No person shall be held to answer for a capital, or otherwise infamous crime, unless on a presentment or indictment of a Grand Jury, except in cases arising in the land or naval forces, or in the Militia, when in actual service in time of War or public danger; nor shall any person be subject for the same offence to be twice put in jeopardy of life or limb, nor shall be compelled in any criminal case to be a witness against himself, nor be deprived of life, liberty, or property, without due process of law; nor shall private property be taken for public use without just compensation.' - FIFTH AMENDMENT [U.S. Constitution] Hope this helps!

I'll try, but I'll probably get it all wrong!
I think it means that... hang on, I'll use Google!
...
Ok, I got... nada! Lemme think...
Right, I think what it's saying is that you don't have to have a court case without the protection of a judge. But that's probably completely wrong. Don't ask me - ask an adult!

When people say they'll "take the fifth", they're usually referring to the part that says "nor shall be compelled in any criminal case to be a witness against himself". Basically, it means you do not have to provide any information that could be taken as evidence of wrongdoing on your part (whether or not said wrongdoing actually occurred).
Eg. If a murder happened at your local Meijers at 8:00 PM last Tuesday, and you were asked by authorities where you were at 8:00 PM last Tuesday, you have the right to "take the fifth" and not answer.
They are not allowed to use your refusal to answer in the case against you -- eg. they are not allowed to say that your refusal to say whether or not you were at Meijers at 8:00 PM last Tuesday means you have "something to hide" and are therefore guilty, they have to find fingerprints or witnesses or something to prove that you were there instead. This is because "taking the fifth" doesn't necessarily mean you have something to hide, or, if you do, that it is related to the case. For example, you might not tell the authorities where you were at 8 PM last Tuesday because you were sleeping with your neighbor's wife, not because you were at Meijers killing somebody.
(I am not a lawyer, this is not legal advice, etc.)
